Blog blahs
I'm not feeling very bloggy today.
We have a lot of irons in the fire around here.
That may explain the loss of blogging motivation.
It is going to be a bit more time but I'm hoping to have a big bathroom and craft room reveal.
I just spray painted something for the bathroom.
The item I spray painted looks awesome.
Now I just have to impatiently wait for it to dry.
I would have spray painted it earlier but the wind has been bonkers in this part of Iowa.
The girls couldn't play outside yesterday because of the wind.
In fact, the wind continually blew our porch chairs back and forth all day.
I would have gone out to collect them but I was afraid I might blow away with the chairs.
The funny thing though is that despite the wind I went golfing last night with some friends.
We had a GREAT time!
I love getting out of the house for fun.
I get out plenty for meetings or jogs but sometimes you need a little fun thrown in there.
Have I ever shared my recipe for this????
It is called...Cinnamon, Chili Powder, Peanut Butter Chicken.
I saw a girl on the Rachael Ray show participating in a month long cooking contest...or something like that.
For one challenge she was given a small handful of ingredient and was to use those ingredients to create an award winning meal.
Her ingredients were chicken breast, corn flakes and peanut butter.
She added a few spices and wah-lah!
I didn't write down the recipe but tried to recreate it myself.
I'm a big fan.
Crush a bunch of corn flakes or honey bunchs of oates, or a similar cereal in a plastic bag.
Add in a large handful of chili powder.
A small handful of cinnamon, a little kosher salt and a wee bit of pepper.
Dip sliced up chicken in milk and throw in the bag to coat.
Then fry in a skillet with a little olive oil.
Serve with peanut butter.
The first time I made this we didn't have kids...or maybe just one kid.
So I heated up the peanut butter in a tiny skillet and mixed in a tad of chili powder and cinnamon to the peanut butter. Yum!
Now that I have less time I usually toss some peanut butter on each plate...no heating or fanciness.
This is one of my favs.
